If anyone knows of some great tracks (Farmland, firebreaks, gravel road/paper roads) that can be accessed without permission/anytime?  Auckland / Waikato / Coromandel Areas.

There's an awsome road over Matahuru - head out from Aucland then on the road down to Tahuna look out for a small hall and sign post at Kaihere, goes to Ohinewai - it's a windy gravel track of a road that climbs quite high - at the top you can park up and walk to the TV station and you get the best view of Waikato and Hauraki I've ever seen.

Head back to Auckland thru Maramarua forest or something

Coromandel;
There's the Thomason track from the back of Old Te Aroha Road - between Matamata and Te Aroha, it's a bike/walking/4wheel drive track that goes right across the mountains to come out by Katikati.

If you ride up the Thames coast, north of Thames, and turn off at Tapu and take the road over to Coroglen. It's an awesome windy gravel road, then head north and take the 309 road back to Coromandel township (309 corners of gravel road) - then head north and over to Kennedy Bay where the road ends up going along the beach.
